This week, Exeter welcomed Claridge’s in Mayfair trained patisserie chef, Paula, and her vegan patisserie, The Lin Den, to its independent offering.
For this week’s #FinditinExeter, we visited this brand-new eatery to chat all things pastry and cake!
The Lin Den, which can be found on North Street, has a fully vegan cake and pastry menu, with one vegan and one vegetarian savoury offering for when you want to extend your coffee and cake catch up to brunch.
Pay a visit to The Lin Den and you will find Paula baking in the kitchen in the centre of the café. She bakes small batches fresh, every day, starting at 5am! From the cinnamon rolls and chocolate and custard buns, to the sour cherry frangipane and mini lemon drizzle loaves, you are guaranteed to step into cake heaven.
Originally from Romania, Paula got hooked on a baking television show whilst studying at university and realised she wanted to make her hobby a reality. With both her husband, Adrian, and herself wanting to study in London they made the leap and arrived in the city. After training at Claridges in London and specialising in French patisserie for 6 years, Paula, joined by Adrian, moved to Exeter to make her dream of owning her own eatery come true.
Jump forward to today and Paula can now bake vegan delights each and every day for The Lin Den, with the goal to turn the patisserie 100% plant based in the near future.
The Lin Den is open Monday to Saturday, 9am – 5pm.
